This recipe is the perfect mix of coconut and bananas to give you that ice cream consistency SO GOOD you wouldn't believe it's not actually ice cream!
Prep Time 5 minutes mins
Cook Time 5 minutes mins
Total Time 10 minutes mins
- 2 Whole Frozen Bananas
- ¼ Cup Unsweetened Plant-Based Milk (I prefer homemade almond milk) *Add more liquid if need be but only a very small amount at a time.*
- ⅓ Cup Cacao Nibs
- 1 tbsp Vanilla extract *Can substitute for a small amount of vanilla protein powder if you prefer but may need to add more liquid.*
- 1 Packet of Pitaya Foods Organic Coconut *or ½ a cup of real coconut if you have it.*
- 1 tbsp Coconut Nectar or Date Sugar *This is optional. Sometimes I leave it out depending on my sweetness mood for the day. Banana is already sweet so it's going to be good no matter what!*
Peel and freeze bananas overnight if you do not have any frozen already. Make sure to break the banana into 3-4 pieces and lay flat so you can easily pull them apart once they are frozen. This makes it easier on your blender.
Add milk to the bottom of the blender.
Add your remaining ingredients and blend. I like to top mine with more cacao nibs, peanut butter, or raw granola. Make it fun!
