These Teriyaki Chickpea Lettuce Wraps are a healthier and tastier main dish meal than the traditional salad you see at the table.
I will say that I was hesitant to try this recipe. It’s simple and I had never had teriyaki seasoned chickpeas. But, after cooking it several times and it being a hit every time, I could easily see this recipe replacing many peoples chicken salads.
How to make the Teriyaki Chickpea Lettuce Wraps
- In a large skillet, heat 1 tbsp. sesame oil over medium-high heat.
- In the same skillet heat 1tbsp. sesame oil over medium-high heat, add garlic and 2/3 cup of green onions, sauté for 30 seconds.
- Add bell pepper and cook for an additional 2 minutes.
- Stir in 2/3 of the Teriyaki Sauce, saving the rest for drizzling. Cook for 1 minute, stirring occasionally.
- Stir in carrots, mix thoroughly until mixture is heated through to your preference.
- Serve over lettuce leaves and garnish with cashews, green onion and sesame seeds. Enjoy!
Recipe Tips
Change up the flavor for this Teriyaki Chickpea Lettuce Wraps recipe. Don’t love teriyaki? Then try your favorite sauce that you use on your chicken wings. Soy sauce would also be great with this recipe. You could do the Teriyaki Chickpea Lettuce Wraps with soy sauce instead of teriyaki and if you would like it with an additional dish – veggie lo mein would be great!
Substitutions
I recommended in the recipe tips section that you can switch up the teriyaki sauce if you do not like teriyaki sauce that much. You can switch it out for soy sauce, BBQ sauce, your favorite chicken wing sauce and so much more.
Meat – If you are looking over this recipe and thinking, BUT I really want meat. If you are a meat eater then add your favorite meat. Shredded or thinly sliced chicken would be my recommendation for this recipe. After step one (heating 1 tbsp of sesame oil over medium high heat) then proceed to
- Add the chicken and cook for 3-5 minutes or until cooked through and no longer pink in the center, internal temperature should read at least 165ºF. Remove to plate.
Then continue to follow the instructions of the recipe and add the chicken to the wraps when the recipe calls to add the chickpeas.
